London Restaurants commit to cutting food waste

foodwasteaudit_reducingfoodwaste-1688x900Brasserie Zedel, Angela Hartnett’s Cafe Murano and Hawksmoor Air Street are among 11 restaurants that have collectively agreed to reduce their food waste by 25% in the next year.

According to the Crown Estate, the UK foodservice industry currently wastes enough food to ‘fill The Shard nearly 11 times every year’ leading to a loss of £2.5billion across the sector.

It is hoped that by signing up to this pledge restaurants will not only reduce their environmental impact but also increase the efficiency of their operations.

The announcement of The Food Waste Pledge comes a week after the Government’s Good Surplus Waste Champion, Ben Elliot, called on the hospitality industry to commit to cutting food waste by 50% over the next 12 years to put the UK in line with the UN’s Sustainability Development Goals.
